Nigerian Jollof Rice is a popular dish in Nigeria and is enjoyed by many. Here is a simple recipe on how to prepare Nigerian Jollof Rice:
Ingredients:
- 3 cups of long-grain rice
- 2 red bell peppers
- 2 tomatoes
- 1 onion
- 3 cloves of garlic
- 2 scotch bonnet peppers (or to taste)
- 1 teaspoon of thyme
- 2 teaspoons of curry powder
- 2 teaspoons of dried thyme
- 2 teaspoons of dried basil
- 1 teaspoon of ginger powder
- 2 tablespoons of tomato paste
- 1/2 cup of vegetable oil
- 3 cups of chicken or beef broth
- Salt to taste
Instructions:
- Rinse the rice and set aside.
- Blend the red bell peppers, tomatoes, onion, garlic, and scotch bonnet peppers in a blender until smooth.
- Heat up the vegetable oil in a large pot on medium heat, add the blended pepper mixture, thyme, curry powder, dried thyme, dried basil, ginger powder, and tomato paste. Cook for about 10 minutes or until the mixture has reduced and thickened.
- Add the rice to the pot and stir to coat the rice with the pepper mixture.
- Add the broth to the pot and stir to combine. Cover the pot and reduce the heat to low.
- Allow the rice to cook for about 25-30 minutes or until all the liquid has been absorbed and the rice is cooked through. Do not stir the rice while it cooks.
- Once the rice is cooked, turn off the heat and fluff the rice with a fork.
- Season with salt to taste.
- Serve hot with your favorite side dish.
