How to make Efo Riro
Efo Riro is a popular Nigerian vegetable soup made with a variety of vegetables and a flavorful base. Here is a recipe for making Efo Riro:
Ingredients:
2-3 cups chopped spinach or other green leafy vegetables (e.g. kale, collard greens, or pumpkin leaves)
1 red onion, chopped
2-3 scotch bonnet peppers or habanero peppers, chopped
2-3 tablespoons palm oil or vegetable oil
2-3 tablespoons locust beans (iru)
2-3 tablespoons ground crayfish
1-2 cubes of Maggi or knorr seasoning cubes
Salt to taste
2-3 cups of assorted meats and fish (e.g. beef, goat meat, smoked fish, dried fish, or crayfish)
Instructions:
Rinse and chop the spinach or other green leafy vegetables and set aside.
In a pot, heat the palm oil or vegetable oil on medium heat, then add the chopped onions and scotch bonnet peppers or habanero peppers. Fry for a few minutes until the onions are soft and the peppers are fragrant.
Add the locust beans and ground crayfish to the pot, and stir well.
Add the assorted meats and fish to the pot and stir well. Cook for a few minutes until the meat is browned.
Add the Maggi or knorr seasoning cubes and salt to taste. Stir well.
Add a little water to the pot, cover and simmer for 10-15 minutes until the meat is tender.
Add the chopped spinach or other green leafy vegetables to the pot, and stir well. Cook for a few more minutes until the vegetables are wilted.
Taste and adjust the seasoning as necessary.
Serve hot with your choice of fufu, eba, pounded yam, or rice.
